Ingredients (Makes approximately 12 biscuits)

225g softened unsalted butter
275g rolled oats
100g plain flour
2g bicarbonate of soda
150g caster sugar
1 lemon zested


1. Preheat the oven to 150c/gas mark 2 and then blitz the rolled oats in a food processor until they are fine.  If you don’t have one don’t worry keep them as they are.
2. Combine all the ingredients with the oats, either in a bowl or a food processor and mix into a dough
3. Put the dough on a long piece of cling film and spread out then roll it in to a thick sausage shape approximately 5cm in diameter and leave to chill for 40 minutes in the fridge.  If it’s crumbly just squidge it all back together, then slice in to 12 equal shaped biscuits
5. Place on a lined baking tray and bake for 15-20 minutes until golden brown.  Leave space between the discs as they will grow!  Allow to cool if you can!

You can freeze these either cooked or uncooked, just open freeze them and then bag them up.  Add 5 minutes to the cooking time if cooking from frozen.
